Floral, fruity and elegance are three words I would use to describe this coffee from Gringo Nordic Coffee Roasters. I’ve had some struggles finding a sweet acidic coffee from Kenya that just hits the profile that I’m searching for. I tried a lot of different brews but preferred brewing it with a Chemex.
Some coffees need that thick multi-layered filter that the Chemex has, it delivers a much cleaner cup and that might be just the thing I needed to get this coffee to the result I was searching for. I like to keep it simple; 20g coffee per 300g water, just bloom it for with water (double coffee amount, in this case 20g x 2 = 40g blooming water) for 45 seconds, then just keep the water at a steady flow, try to keep the same level until you’ve reached the correct water amount. That’s it, nothing more than that really; this will give you a lovely cup of coffee with sweet acidic notes.
