Today’s Sushi: “Panko no Sakana Nigiri” (I don’t even know what that means, but panko is bread and nigiri is nigiri—maybe it means fish stick sushi, who knows?)
As you know, I’m deep into my sushi journey, so of course, I have to share today’s creation.
Rice: I went with Shinmei Akita Akitakomachi instead of Koshihikari—round and delicate, a worthy alternative. Naturally, I added sushi-su after it had finished cooking in the rice cooker.
Wasabi? No, thanks! I took the rustic route and grated fresh horseradish on my porcelain grater.
Protein? A true classic—the pre-breaded fish stick. A little horseradish underneath for an extra kick before shaping it together with the rice.
Topping: Black seaweed caviar, elegant and refined… until I had the brilliant idea to throw on some chili threads. It looked awful. Oh well, you get what you get.
