Waffle Day is celebrated on March 25th every year in Swedan and has its origins in the Christian feast of the Annunciation. Over time, the Swedish word “vårfrudagen” (Our Lady’s Day) gradually transformed in everyday speech into “våffeldagen” (Waffle Day), and today it’s a well-established food tradition in Sweden.
This year, I took the opportunity to make a slightly more luxurious lunch waffle: a base of ricotta cheese, topped with quick-pickled cucumber, bell pepper, and spring onion. On top of that, I added Coppa along with 5-year aged Parmigiano Reggiano that I bought from @robertsonscharkuteri.
And of course, after a savory waffle like that, you need dessert. I kept it simple — but added a little Yuzu Salt from @fruconn to the batter to enhance the citrus notes. Then I topped the waffle with lightly whipped cream and homemade quince marmalade that I cooked today. Finally, I finished it off with a sprinkle of fresh lime zest over the cream.
All in all — a very good Waffle Day.
